The eggs for sale come in mixed sizes, Jumbo, Extra Large (XL), Large (L), or Medium (M), subject to availability, and sold by the dozen. 

 

For weight guidance, we adhere to the USDA egg size chart when packing our cartons. Below is the USDA egg size chart with weights in ounces (oz) and grams (g):

  • Jumbo: Greater than 2.5 oz (70.9 g)
  • Extra Large (XL): 2.25 oz (63.8 g)
  • Large (L): 2 oz (56.7 g)
  • Medium (M): 1.75 oz (49.6 g)
  • Small (S): 1.5 oz (42.5 g)
  • Peewee: Less than 1.25 oz (35.4 g)

 

Our Organic, Pasture-Raised, Ungraded Eggs come from hens raised on our pasture-based poultry farm, where they have access to outdoor pasture areas where they can forage, scratch, and roam freely, just like they would in their natural habitat. Our pasture-raised hens have the opportunity to exhibit natural behaviors and consume a varied diet that includes grasses, insects, and other vegetation found in the pasture, in addition to the high-quality organic or GMO-free feed they are provided. This natural diet ensures that our birds are healthy and happy, resulting in delicious, nutrient-dense eggs. No hormones are used with any laying hens and no antibiotics are ever added to our organic feed. 

 

This farming method emphasizes animal welfare, environmental sustainability, and the production of high-quality eggs with enhanced nutritional content vs. conventional factory farming methods where hens are confined to indoor cages or limited outdoor spaces.

 

The color of the eggs may vary, with most dozen packs featuring a diverse assortment of colors that reflect the range of hues produced by our laying flock, including tan, chocolate brown, green, white, and/or blue.

 

The eggs are cleaned, washed, and rinsed with an approved sanitizer. Then, they're packed and refrigerated at 45° F. The temperature is held at 45° F or less during transportation, and at the point of sale.

    Ungraded Eggs vs. Graded Eggs

    Ungraded eggs are sold without undergoing an official grading process by regulatory authorities, and may vary in quality, size, color, or weight. These eggs are typically sold directly from small-scale producers, such as local farms, without being sorted or classified based on quality, size, color, or weight. If Ferentinos Farm sells more than 30 dozen chicken eggs per week, we will need to grade our eggs, according to established standards (see below).

     

    Graded eggs typically sold in supermarkets, grocery stores, and other retail outlets are inspected, sorted, and classified according to established standards. They are sold with an official grading designation indicating their quality and grade. In many countries, including the United States, graded eggs are categorized into different grades, such as Grade AA, Grade A, and Grade B, based on factors such as shell quality, yolk integrity, and albumen consistency. Graded eggs must meet specific standards set by regulatory authorities.
